Sweet Preserve: Tomato



45 small-size tomatoes

1 ½ kg sugar

60 blanched almonds


3-4 small-size green mandarins

1 stick of cinnamon

2 spoons of honey

Juice of 1 lemon



Once you boil a pot of water, add the tomatoes in portions of 10 and then take the peel out. Then pour into a bowl of water with whitewash and leave it there for about 1 hour. Then wash carefully the tomatoes with fresh water. The next step is to carefully eject the inside seed by using a long stick. When you finish this process, put the tomatoes into water to be washed and then let them dry from water.


The next step is to cut the mandarins into smaller pieces and stuffed the tomatoes. Put into each tomato a small piece of mandarin with an almond. Then, fill the hole on the top of the tomato, with a piece of carnation in order to hide the inside of the tomato. Follow the same procedure for the rest of your tomatoes. When all of them are stuffed, place them into a pot. Place the sugar on the top and add enough water to cover your stuffed tomatoes. When the syrup is ready, add the honey and lemon juice.
